My Current Gluten-Free Hyperfixation Foods After a Celiac Diagnosis

One of the strangest parts of a celiac diagnosis is realizing how much mental energy goes into food.

Suddenly, every meal requires a little more thought. Every restaurant needs research. Every ingredient label needs to be questioned. And sometimes? It’s just easier to have a few safe foods you know you love and eat them on repeat.

I’ve never been a picky eater, so trying new foods has never really been the hard part for me. The challenge has been figuring out how to make gluten-free life feel easy, normal, and enjoyable. Celiac has forced me to get creative in the kitchen, and along the way I’ve found a handful of snacks, ingredients, and products that I keep coming back to because they just work.

Sometimes it’s about removing some of the mental load. Sometimes it’s about throwing together completely random ingredients we know are safe and accidentally creating something delicious.

It’s all about balance.

I’m still pretty new to my celiac diagnosis, so I’m very much in the trial-and-error phase of figuring out what makes gluten-free life easier.

Here are the gluten-free foods I currently cannot stop eating:

Corn Tortillas

I am officially in the phase of celiac where I will put literally anything on a corn tortilla.

Breakfast burrito? Let’s go.

Leftover pork chop with Kinder Honey Hot BBQ Sauce and some famous local “Fireman’s Relish” (a cabbage-based, mustardy, vinegary, spicy deliciousness)? Absolutely.

Are corn tortillas the perfect vehicle for every random leftover in my fridge? Yes. Yes, they are.

Rice Cakes & Peanut Butter

This has been my thing.

A lightly salted rice cake with natural peanut butter (I’m loving this Teddie brand) and then either a smear of jelly or sliced banana on top.

Bone apple teeth.

This has become one of my go-to breakfasts or snacks because it is quick, filling, and requires basically zero thought.

Snack Factory Gluten-Free Pretzel Crisps

These bad boys are incredible.

I eat them with hummus, cheese, or just straight out of the bag.

They are one of those gluten-free products where I don’t feel like I’m eating a “replacement” food. They are just genuinely good, and they have earned a permanent spot in my pantry.

Franz Brioche Bread

Y’all… this is THE one.

Gluten-free bread is one of those things that can be incredibly disappointing, so finding one that actually scratches the bread itch feels like winning the lottery.

It’s good toasted. It’s good not toasted. It makes a fantastic French toast.

My tomato plants are currently going wild, and this bread has been the perfect way to satisfy that summer tomato sandwich craving.

Kiwis

I know this one is random and specific, but hear me out.

Even after going gluten-free, I was still dealing with some digestive issues, especially slow digestion. Adding a kiwi to my day seems to help keep things moving.

Plus… they’re delicious.

Sometimes the random foods end up being the ones you love the most.

King Arthur Brownie Mix

This brownie mix is the GOAT.

Fudgy. Chocolatey. Easy. Family-approved.

When you’re newly diagnosed with celiac disease, finding gluten-free treats that feel like a normal dessert is a big deal.

Just trust me on this one.

Lesser Evil Himalayan Pink Salt Popcorn

It’s crunchy, salty, and honestly not a bad choice when I want something snacky without immediately feeling like I ate half a bag of chips (even though… no judgment if I do).

I’m sure this list will continue to change as I keep learning how to live gluten-free, but right now these are the foods making this transition a little easier (and a lot more delicious).
